Dining at a dinner event

Redeemer Lutheran College Students Shine at Dinner Event with Celebrity Chef Matt Golinski

The Certificate II in Hospitality is more than just a qualification—it’s an opportunity for students to gain real-world experience in a thriving industry. Recently, students from Redeemer Lutheran College had the privilege of showcasing their skills at an exclusive dinner event, where they worked alongside celebrity chef Matt Golinski. This event is a testament to the invaluable experience and confidence the VETiS-funded program provides to budding hospitality professionals.

Under the guidance of our dedicated team, including Blueprint’s School Program Manager, Rachelle Carmody and Trainer and Assessor Tracy Lee, the students demonstrated their ability to curate and execute a fine-dining experience. With the support of industry mentors and structured learning, students were involved in every step, from planning the menu to serving guests.

The dinner, featured a mouth-watering menu that included:

Main Course:

Chicken Saltimbocca on Ricotta Gnocchi with Roasted Tomatoes and Red Onions, Pocket Salsa Verde
Roasted Lamb Rump on Dukkah Crusted Pumpkin, Spinach, and Chickpeas, Yoghurt and Tahini Sauce, Pomegranate Molasses

Dessert:

Honey Custard Crepes with Strawberries in Rose Syrup, Strawberry & Vanilla Bean Sorbet
Crème Caramel, Butterscotch Banana, Dark Chocolate Ice Cream, Hazelnut Biscotti

Students meticulously prepared each dish, showcasing the high level of skills they’ve gained through SIT20322 Certificate II in Hospitality program.

This event was not only a unique learning opportunity but also a significant step toward developing industry-ready students who will contribute meaningfully to the hospitality sector. Programs like these, supported by VETiS funding, are essential in fostering future professionals who are ready to meet the needs of an ever-evolving industry.
